Vegan, nut and refined sugar free, these bliss balls are delicious and a great plastic free snack to have on hand when you are on the go! They are also incredible easy to make and even easier to eat!
Ingredients;
200g dried apricots
50g desiccated coconut
25g pumpkin seeds
25g sunflower seeds
50g porridge oats
1 tbsp maple syrup or brown rice malt syrup
1 tbsp coconut oil
Method
1. Place all ingredients into a food processor and pulse until the mixture forms a paste. Feel free to keep some bits slightly larger for more texture. Add further coconut oil or maple syrup if the mixture is too dry.
2. Using your hands, roll the mixture into equal size balls.
3. Place in the fridge to firm and leave for at least an hour
4. Eat and enjoy

For an extra yummy treat, dip the bliss balls in melted homemade chocolate or melt some dark chocolate in a bain marie. Dip the balls into the chocolate and put back into the fridge to set.
