Maple Walnut Buckwheat Granola

This recipe is worth doubling or tripling so you can give away a jar to a friend or just have it on hand for your breakfasts or the perfect handful snack on your way past the pantry.

It is incredibly adaptable so feel free to chop and change the recipe as suits you and your tum.  This is our go to, never fail, never tire of granola option.  Crunchy and delicious. We have included some of our other favourite flavour combos below...

Maple Walnut Buckwheat Granola

Dry Ingredients;

2 cups buckwheat
2 cups oats
1/2 cup walnuts roughly chopped
1/2 cup almonds roughly chopped
1/2 cup coconut chips
1/2 cup mixed seeds - we used linseed, pumpkin and sunflower

4 tbsp maple syrup
4 tbsp melted coconut oil or water
1 tsp 
ground cinnamon

1/4 tsp salt

Soft ingredients to add after baking;
1/2 - 1 cup dried fruit. We used goji berries and dried blueberries

Method;
Preheat the oven to 175°C
Line a baking tray with compostable baking paper.
Combine all dry ingredients in a bowl.

Whisk together the maple syrup, oil and spices then stir into the dry mix until combined.
Spread the mixture out over baking sheet and bake for 15 - 25 mins, stirring a couple times to prevent it getting burnt
Allow to cool before adding the dried fruit. Add extra cinnamon to taste.
