We got this recipe from Nadia Lim. This fruity number uses chia seeds rather than sugar to get that nice jammy consistency so it’s healthy + scrumptious.
Also takes about 5 mins to prepare so that’s a win too.
2 cups strawberries - can be fresh or thawed from frozen
2 tbsp water
3 tbsp chia seeds
1 tbsp honey (optional)
1/2 tsp vanilla essence
Throw everything into a small pot and bring to the boil. Stir frequently until the berries have broken down and the mixture thickens (should only take a few minutes)
Store in a sterilised jar in the fridge where it will set a little more. Will keep for around 2 weeks.
