This ancient grain is very high in protein and a good source of calcium, magnesium, vitamin B, vitamin E and dietary fibre. It is gluten free and contains all nine essential amino acids making it a complete-protein source. It is no wonder quinoa is considered a super food! Red quinoa is slightly richer in taste than its white counterpart with a slightly nuttier flavour.
HOW TO COOK; Rinse 1 cup quinoa under water. Heat up 1 tsp of olive oil in the pan and stir the quinoa through. Add 1 1/3 cups of water to the quinoa and season with salt. Bring to a boil, cover and cook for 15 minutes. Take off the heat and leave covered to stand for 5 minutes before fluffing the quinoa with a fork
